I hope everyone had a wonderful holiday! I’ve been out of town and away from the blogging scene but I can’t wait to catch up on my reading. In the meantime, here is a recipe for a delicious and simple meal you might enjoy.

Tapas Maria

I’ve been making a lot of spaghetti squash lately and I’m very impressed by how tasty and filling it is. I don’t miss pasta at all when I make it!

1 Spaghetti Squash
Dash of Butter or EVOO
1 Bunch of Basil
1 Cup Cherry or Grape Tomates
1 Small Log Goat Cheese
Parmesan (to garnish)

Prep Time: 15 Minutes
Serves: 4


  1. Prick the Spaghetti Squash all over with a fork and microwave on high for 10 to 12 minutes depending on size.
  2. While the Spaghetti Squash is cooking, slice the basil into ribbons and cut the tomatoes in half lengthwise. Set aside.
  3. Once the Spaghetti Squash has finished cooking, let it cool for a few minutes. Carefully slice off the stem and then cut it in half lengthwise. It might still be hot, so I do this step with oven mitts on.

  1. YUM! Going to buy a spaghetti squash next time I’m at the grocery…I used to eat it a lot, but have gotten away from it…Thanks for reminding me how good it is….
