I hope everyone had a wonderful holiday! I’ve been out of town and away from the blogging scene but I can’t wait to catch up on my reading. In the meantime, here is a recipe for a delicious and simple meal you might enjoy.
I’ve been making a lot of spaghetti squash lately and I’m very impressed by how tasty and filling it is. I don’t miss pasta at all when I make it!
1 Spaghetti Squash
Dash of Butter or EVOO
1 Bunch of Basil
1 Cup Cherry or Grape Tomates
1 Small Log Goat Cheese
Parmesan (to garnish)
Prep Time: 15 Minutes
- Prick the Spaghetti Squash all over with a fork and microwave on high for 10 to 12 minutes depending on size.
- While the Spaghetti Squash is cooking, slice the basil into ribbons and cut the tomatoes in half lengthwise. Set aside.
- Once the Spaghetti Squash has finished cooking, let it cool for a few minutes. Carefully slice off the stem and then cut it in half lengthwise. It might still be hot, so I do this step with oven mitts on.
