The main reason I started making this dish is because love artichokes…but also, I found a steam bag of frozen artichoke hearts at my local Fred Meyer grocery store. I had been buying the artichoke hearts in a can or a jar, but I’ve found this steam bag option to be much healthier. According to the nutrition facts, it’s just basically frozen artichoke hearts, unlike the jars and cans which have a lot of salt and preservatives added. If you don’t have a Fred Meyer close by, I’d suggest looking for a similar product, or just cooking your own.
Start by popping the steam bag into the microwave for about 5 minutes. Then, let it stand for about 1 minute (directions on bag). If you don’t have the steam bag, you can boil or steam about 6 raw artichoke hearts until they’re tender, and cut them into quarters.
Once the artichoke hearts are cooked, place them in a bowl with the following ingredients:
2 tablespoons of olive oil
1 tablespoon of parmesean cheese (or more if you like cheese :))
fresh ground pepper to taste
Mix and enjoy!
Most times, I’ll eat the entire thing myself for a meal, but it also makes a delicious side dish for dinner! For me, it’s incredibly satisfying, and the artichoke has a ton of fiber that keeps me feeling full for a really long time.
