I know, I know… it is an interesting combo. I will say this though – what better salad idea for a triathlete than something that combines trail mix and spinach? I re-blogged this from my dedicated food blog, Tapas Maria.

I had a weird craving for trail mix and spinach once and this salad is the direct result. I know, it sounds like a really strange combination… but it works! Being from Alaska, I like to use Alaskan products whenever possible. The blueberry vinaigrette in this salad is produced by the Seldovia Village Tribe. The label says that everything they produce is hand-picked in Seldovia Bay and sold by their company, “Alaska Pure Berry.”

Ingredients:
Wild Blueberry Vinaigrette
EVOO
Spinach (washed & patted dry)
Trail Mix
Blueberry Wensleydale Cheese

Prep Time: Less than 5 minutes

Directions:

  1. Stir some of the Blueberry Vinaigrette and EVOO together in a bowl to taste.
  2. Add the spinach to the bowl and toss everything together.
  3. Top with some Trail Mix and Blueberry Wensleydale Cheese. Serve.
