This is a great summer salad! The black beans are a good source of protein and the Gorgonzola adds a nice kick! The Mandarin oranges are great but you can really add whatever bite-size fruit you like (strawberries or grapes are great too!).
The amount of each ingredient that is added depends on the person, but here’s what you need:
1 can black beans
1 can corn nibbles
1 can or container Mandarin oranges
Gorgonzola cheese or Bleu cheese
Extra virgin olive oil
Red wine vinegar
Make a bed of lettuce in the plate, and then spread out the beans, corn and mandarins on top.
Sprinkle on the Gorgonzola next. Finally, add the oil and vinegar dressing (one part each) and enjoy!
