Pan Cooked Tofu with Asian Vegetables and Brown Rice


This dish is really simple and delicious! It’s also very adaptable to what you like, but here’s what I put in mine (it changes depending on what’s fresh at the store).

-Bok Choy

-Canned Baby Corn



-Water Chestnuts

-Bamboo Shoots


-Brown Rice

-Soy Sauce

Cut the tofu into 1/2 inch thick slices and cook it in a frying pan WITHOUT any oil or cooking spray.  This way, the tofu can brown and dehydrate a bit. 

Cut up all the vegetables into bite size pieces and cook them in a pan or wok with a little oil until they’re tender. 

Prepare brown rice (can also substitute rice for noodles or anything else you like)

Mix it all together in a bowl, add soy sauce and enjoy!
